Crudités: Crudité is the character of what is raw. In the kitchen and in the plural, raw vegetables are foods eaten raw. The term (always used in the plural in this sense) designates in particular dishes or preparations made up of fresh and raw vegetables, seasoned or not, served as appetizers, for example grated carrots, radishes, celery in remoulade, red cabbage salad, tomato salad, etc. Crudités are generally minced, grated or finely chopped.
