Patranque: Patranque is a rustic dish from Cantal (central region of France) made of stale bread soaked in milk, wrung out and worked with butter and fresh cantal.
The patranque is served as a hot starter with possibly a green salad or at least a parsley, or even chopped garlic offered separately.
