Pompe (pastry): A pump is a buttery pastry, sweet or savory, popular in several regions of Auvergne, Lyonnais and Provence. It is generally a pie, pâté or brioche, variously garnished.
In Provence, the oil pump is a large cake of leavened dough, in olive oil, is flavored with orange blossom water or lemon zest, sometimes embellished with saffron.
