Jêlon (pastry): Jêlon is a mixture (device) composed of eggs, milk and sugar, comparable to a sweet royal. This preparation, sometimes with the addition of crème fraîche or buttermilk, or even flour, makes it possible to enrich the fruit tarts while ensuring a binding of the cooking juice.
