Egg omelette: To make an egg omelet, the white and yolk are beaten together (or separated according to some recipes, like the white omelet) and cooked in a pan to which you can add various ingredients.
Some chefs just mix, not beat, in order to give the omelet a more rustic character.
We cook, according to taste, the well-cooked omelet or the runny omelet.
