Tiger nut (sauce): Tiger nut sauce (sometimes spelled suchet) is, in classic cuisine, a sauce made with a fine julienne of vegetables steamed in butter, with the addition of white wine and fish stock.
After cooking the fish, it is greatly reduced, completed with fish sauce and finished in butter.
