Namasu (Japanese cuisine): Namasu (膾) is a Japanese dish consisting of finely chopped raw vegetables (nama), and seafood or fish marinated in rice vinegar (su) for several hours, slightly brining them.
Namasu is a Chinese dish popularized in Japan during the Nara period (710-794).
Namasu is sometimes referred to as namasu-kiri (kiri meaning "minced").
