Mulard (duck): The mulard is a duck resulting from a crossing of the Nantes or Challans duck and the Muscovy duck. It is mainly raised in the southwest of France and it is fattened for the production of high quality foie gras.
Its flesh is firm, red and its fat white. The real duck breast comes only from this variety of birds.
