Moque (pastry): Moque is a specialty of Ghent pastry (from the city of Ghent in Belgium).
This large pudding of leavened dough, flavored with brown sugar, cloves and anise, is rolled in granulated sugar, cut into thick slices and baked in a low oven.
The moque is locally called Gentse Mokken.
