Melanzane alla parmigiana (Italian cuisine): Melanzane alla parmigiana are a Sicilian specialty composed of eggplant (melanzane) in strips alternated with mozzarella di buffala and candied tomato. Everything is cooked in the oven very slowly and gratinated with parmesan, sometimes decorated with cooked ham or raw ham.
The melanzane alla parmigiana can be eaten hot or cold as a starter or as an accompaniment to fish.
