Médicis: "Medici" (or à la Médicis) is, in classic cuisine, the name of a preparation of lamb hazelnuts or sautéed tournedos, topped with béarnaise or surrounded by a cord of deglazing from cooking in Madeira and with tied veal stock.
The garnish combines hazelnut apples and artichoke bottoms steamed in butter, garnished (alternating the vegetables) with peas and small scoops of carrots and turnips, the same size as the peas.
