Mandilli di seta (Italian cuisine) : The pasta mandilli di seta (in local dialect: mandilli di saea) are a specialty little known from Liguria, (northwestern region of Italy). It is leaves de dough very thin, like silk handkerchiefs, more Finnish than the leaves of lasagna (the term mandibles comes from the Arabic "mandiil" meaning chiffon). In some regions of Italy they are called handkerchiefs (tissues). In the region of Genoa, their manufacture dates from the Middle Ages. These mandilli di seta are traditionally prepared with pesto, basil and Parmesan, but like all pasta Italian, they are available in many variants.
