Low ribs (butcher's shop): The low ribs are the muscles of the withers surrounding the first five dorsal vertebrae of the ox. Boneless, the low ribs allow tasty preparations of stew, braised beef or bourguignon.
Sliced, they provide grills, or “Parisian entrecôtes”, fatty, very appreciated by gourmets.
