Lote (fish): Lote is a freshwater fish (Gadidae family) whose elongated cylindrical body, yellowish marbled with ocher and brown, is covered with a viscous coating (mucus). The lot can reach one meter; it abounds especially in the Savoyard lakes.
Stripped, it prepares itself like an eel or a lamprey; its liver, voluminous, very sought after, is used to prepare terrines, and it is fried like calf's liver.
