Liptauer (Slovak cuisine): Liptauer is a spicy spread made from goat's milk, sheep's milk, quark or ricotta. It is a product of the regional cuisine of Slovakia (where it is known as Šmirkás, form of the German word Schmierkäse, which means cheese spread, Austria, Hungary (Liptói túró or Körözött), Serbia (Urnebes salata, “Urnebes sauce”), Croatia and Italy (mainly in the province of Trieste).
