Landaise (à la): The expression "à la landaise" applies to various preparations inspired by the cuisine of the Landes, (south-west of France), using in particular Bayonne ham, goose fat and ceps. The designation “Landaise style” applies to rustic dishes (potatoes, beans) or more refined dishes (becfigs, goose or duck liver) as well as to the great regional classics (confit).
