Kamsu (Finnish cuisine): Kamsu is in the tradition of northern Finland (Lapland) bread made with blood bread dough.
The dough is made of water, blood, barley, rye flour and wheat flour, butter, salt, onions and allspice. The finished, well-puffed dough is shaped either into large slicing loaves or small flatbreads about a centimeter thick. The rather solid unleavened pancakes are cooked to maturity in salted water
