The bread dough is flavored with green anise, a plant that was once widely grown in Ségala (a natural region of France that extends to the west of the Aveyron department, to the north of the Tarn).
Scalded Janot owes its crispiness to the way it is prepared: after bathing in boiling water, the dough is left to dry on a wire rack before baking.
