Shell (pastry): A shell is a small preparation of meringue dough, with progress or success, used to make biscuits or cakes.
The petit-fours shells are welded in pairs with a fruit marmalade, a scented buttercream or chestnut cream, then optionally glazed with fondant.
The meringues are joined in pairs with praline cream, whipped cream or ice cream.
