Goyère: A goyère is a specialty of northern France, particularly Valenciennes, whose origins date back to the Middle Ages.
It was then a cottage cheese, egg and brown sugar (or honey) tart, flavored with orange blossom water.
Today it is a rich Maroilles tart (mature and white), which is eaten very hot, as a starter, with a fairly strong beer or red wine.
