Needle: The needle is a seawater fish and more particularly rock fish from the Mediterranean (family Syngnathidae). The needle or aiguillette is a fish with a thin, elongated body like an eel and a very pointed snout. It is also called garfish.
In the kitchen, it is used mainly for fish soup but also pan-fried or baked, in sections, after being marinated to loosen its somewhat firm flesh.
