Dauphine (à la): The expression "à la Dauphine" applies, in classic cuisine, to processed vegetables such as dauphine potatoes (celeriac or aubergine, for example). If the puree obtained is too watery, it is dried in the oven (especially for zucchini).
The pieces of meat "à la dauphine" are served with a garnish of dauphine potatoes.
