Darphin potatoes: The potatoes are peeled, washed, grated using a mandolin or with a large grater into fine straws. These straws are not washed, but sponged on absorbent paper and seasoned with salt and pepper (nutmeg or other spices of your choice).
They are pan-fried in clarified butter, sometimes garnished with fine herbs.
Darphin apples are also called “doormat apples”.
