Creusois (pastry): The creusois is a cake created in 1994 by the union of pastry chefs in the Creuse department (Aquitaine region).
Close to the financier, the Creuse, round and fairly flat, consists of a very soft biscuit with hazelnuts (and not almonds) and keeps remarkably well.
