Colo-colo (Indonesian cuisine): Colo-colo is a spicy condiment from the Moluccas in Indonesia.
Characteristics: Originally from Ambon, the colo-colo is comparable to the dabu-dabu of the cuisine of Manado, because both use red pepper, bird's eye pepper, shallot, tomatoes, salt and palm sugar, all mixed with calamondin juice (locally known as lemon cui or jeruk kesturi) or combawa, or even lemon juice.
