Coignarde (Swiss cuisine): Coignarde (or cougnarde) is a kind of jam from French-speaking Switzerland, prepared with quinces cut into pieces which are cooked for a long time with concentrated apple or pear juice in large pots until they give a thick, dark mass.
The coignarde is eaten as is or with potatoes in their jackets.
Coignarde is also used to make cakes.
