Coffee sauce: Coffee sauce is a sauce made from coffee extract or Trablit relaxed in a bain-marie with a little water or milk until a liquid is obtained at the right temperature (it i.e. at 50/55 ° C if using a cooking thermometer). We add butter off the heat by mixing with a whisk and finally the crème fraîche to put back on low heat, stirring until a smooth and creamy coffee sauce is obtained.
