Chutney : A chutney (English word coming from Hindustani chatni meaning " spices strong ") is a condiments bittersweetcomposed of fruits or vegetables or a mixture of the two, spicy et spices, candied in vinaigre sweet coming like the pickles of the British colonial era in India.
Chutneys can be prepared from many exotic fruits (mango, coconut, ananas, pulp of tamarind), but also with various Western products (Eggplant, tomato, onion, melon, grape, cerise, apple, etc.) ; some chutneys are reduced to mash potatoes, others keep the elements in parts ; all are characterized by jus syrupy and, in some cases, very spicy here coated the ingredients. They raise the dishes a little bland, mainly cold (chicken, fish, Ham, boiled meat).
In temperate regions, chutneys can be made from local ingredients such as apple or fishing. To flavor chutneys, it is common to add sucre, salt, thegarlic, Ginger, fenugreek, coriander, cumin and fetid base.
