Chipolata (à la): The expression "à la chipolata" applies to a garnish accompanying game, braised poultry, pieces of meat or eggs. It combines braised chestnuts, baby onions and small glazed carrots, sautéed mushrooms and blanched and hash brown bacon, to which we add hash browns.
