Chinese (cake) : Chinese is a pastry consisting of a brioche stuffed with custard.
This cake originates from Alsace where it bears the name of Schneckenkuchen meaning " cake en s ". Indeed its shape is composed of juxtaposed spirals reminiscent of the shell of the gastropod. One of the first French importers of this cake did not speak a word of this dialect and when he had it delivered, the supplier presented him with his Schneckenkuchen, faced with the difficulty in pronouncing this word, he replied: "Anyway for me, it's is Chinese”, the Chinese term would then have remained to designate it. However, there is still some doubt about the exact origin of this name.
Pierre Razeau in his dictionary of French regionalisms in Alsace, that the recipe of 1895 contained "Chinese". These Chinese are the fruits from the Chinese bitter orange tree. The bitter orange is a small Orange bitter and confection it was called "Chinese".
Chinese Cake Ingredients: Brioche dough (butterwater all-purpose flour, milk, Baker's yeast, eggs, sucre, salt). Custard (all-purpose flour, milk, egg yolks, sucre and eventually, vanilla, Orange tree Flower water ou rhum).
Some variants exist adding: icing, chocolate, raisins, bark oforanges candied or other citrus.
