Chiliajo (Mexican Cuisine): Chiliajo (sometimes chileajo) de cerdo (pork) is a dish that originated in Oaxaca, Mexico. It consists of chunks of pork boiled in water then cooked in a thick sauce made with roasted seedless guajillo peppers, roasted seedless ancho peppers, raw seedless costeño amarillo peppers, roasted then peeled garlic, cloves, oregano, cumin, red tomato and green tomato, salt and pepper.
