Sevruga: Sévruga caviar is provided by the sturgeon of the "sévruga" variety (Acipenser stellatus). Its eggs are small, light grey, its flavor is less marked than that of other caviars, beluga and osetra in particular.
Sevruga caviar is one of the fairly expensive varieties of caviar, eclipsed in cost only by caviars beluga et osetra. It is produced from the Sévruga or Stellate sturgeon (Acipenser stellatus), native to the Caspian Sea and can be distinguished from its cousins by the size of the eggs, which are generally smaller.
The Sévruga sturgeon is the smallest of the caviar-producing sturgeons. It can weigh up to 70 kilos and measure more than 2 meters. It is native to the basins of the Black, Azov, Caspian and Aegean seas. Because the Stellate sturgeon is the most common of the sturgeons and reproduces faster than its congeners, this makes this caviar more available among sturgeon caviars and also makes it less expensive of the three main types of sturgeon caviar – beluga , osetra and sevruga -. It is estimated that half of the caviar production comes from sevruga.
The flavor is more pronounced than the other varieties, often described as saltier, but it can vary depending on the origin of the fish.
Sevruga caviar is usually packaged and sold in red boxes.
