Caruso (sauce): Caruso sauce is a hot sauce originating from Uruguay. It was named in honor of the Italian tenor Enrico Caruso (1873-1921), very popular in South America in the 1910s. Caruseo sauce is a sauce with mushrooms, cheese (parmesan), fresh cream, walnut kernels and ham. It is especially served with pasta.
