Whiting (meat): Whiting is a piece of beef for grilling, made up of the sartorius muscle, which is the flexor muscle of the hind limb of the beef, located on the thigh and the thigh on the pelvis.
The whiting is part, with the pear and the spider, of the so-called “butcher's” pieces, because they were reserved for amateurs.
