Pavé (butcher's shop): In a butcher's shop, a pavé is a very thick slice of beef, taken from the most tender pieces, (tenderloin, rump steak, etc.) intended to be grilled or pan-fried, and which is generally served for one person.
The term “pavé” is also used for fish as well as for calf's liver.
