Pain de Gênes (pastry): Pain de Gênes is a large Italian pastry made from cookie dough, rich in butter and crushed almonds, not to be confused with sponge cake. More or less light depending on whether or not the egg whites are incorporated separately, whipped into snow, the Genoa bread is baked in a special, round and flat mold with a fluted edge.
Genoa bread is served plain or can be used with a variety of fillings.
