Bocconi egg : L’œuf bocconi (against italien signifiant « orienté vers le bas ») est une specialty Italian made from Egg yolk cooked in four in a ramekin filled then covered with White mounted in snow with some Parmesan et gratin au Parmesan.
Bocconi eggs, including yellow must stay soft, are usually served on toast accompanied by a s green (lettuce, Mash, rocket...).
