Bigoli: Bigolis are Venetian spaghetti made from whole wheat flour. The Venetians consumed them (and still consume them) on Fridays to make “lean”, wholemeal flour being “poor” flour as opposed to white flour, “rich” flour.
Bigolis are made using a press designed for this type of pasta. The device (or die) is equipped with a socket with holes of variable diameter.
