Bagration: "Bagration" is, in classical cuisine, the name of various preparations inspired by recipes dedicated by Antonin Carême to the Russian princess Leonida Gueorguievna Bagration (1914-2010), in whose service he entered on his return from Russia in August 1819.
Some of these preparations have in common macaroni, Russian salad, poultry puree or a salpicon of truffles and scarlet tongue, but the toppings have been modified and simplified compared to the original recipes ...
