Vengeron (fish): In Switzerland, the vengeron is another name for the roach, a freshwater fish of the Cyprinidae family, abundant in Lake Geneva and Lake Neuchâtel.
This fish presents a curious phenomenon of sexual inversion, because as they age, the males become females.
The flesh of the venger is filled with bones. However, it is said to be delicate.
Some chefs prepare it with absinthe, others au gratin, rarely fried.
