Wafer apple: The apples are peeled, washed, passed through a mandolin with a wavy knife. To obtain this grid effect, the potato must rotate a quarter turn with each pass.
The wafers are dried on absorbent paper and then fried in oil at 170°C.
The wafer apples are taken out of the frying bath as soon as a nice golden color is reached.
