Château (apple): The “château” apples are made from potatoes turned in the shape of a barrel and cooked in butter, raw or clarified (without having previously been blanched), possibly with small bacon.
Chateau apples are the traditional garnish for grilled chateaubriand with béarnaise sauce.
They are found in many garnishes (market gardener, Orloff, Richelieu, etc.).
