Akoud: In North African cuisine, akoud is a stew made from beef offal (rumen, curd, large intestine and sometimes bull's penis) cooked for a long time with harissa, garlic and spices (cumin , paprika, pepper), served with lemon wedges or sometimes hard-boiled eggs. It is also served with chickpeas or beans.
