Aïgo boulido: Aïgo boulido is a Provençal soup made from boiled water (hence its name, which is also spelled "bouïdo" or "bullido") and crushed garlic, cooked with herbs from the garrigue then passed.
It is often accompanied by croutons rubbed with garlic.
It is one of the oldest traditional dishes of Provence where, as the saying goes, aïgo boulido sauvo la vito (“garlic soup saves life”).
