Fricassee (Tunisian cuisine): The fricassee or broken fried is a salty donut from the Tunisian culinary tradition, eaten as a sandwich or as a snack.
It is as well prepared at home as it is at fast food vendors.
The dough balls are seared in oil then opened and stuffed with diced potatoes, harissa, tuna, black olives, a hard-boiled egg, mechouia salad and capers.
