Totché (Swiss pastry): The totché is a Swiss cake (canton of Jura), said to be household, which is used as an aperitif and especially on Saint Martin's Day (November 11). It is made from flour, butter, farm milk, eggs and crème fraîche from the Jura. It is tender, salty and slightly tart. In neighboring Franche-Comté, it is called "toutché", which is a specialty of Montbéliard.
