Risotto: Risotto is a preparation of rice from Italian cuisine. It is a reduction of a slowly cooked rice broth (“minestra asciutta” in Italian) with various ingredients. It is generally given as its origin northern Italy.
History: In northern Italy, one of the first notices referring to the cultivation of rice is a letter from Galeazzo Maria Sforza, dated September 27, 1475, sent to the Duke of Ferrara and concerning twelve sacks of rice. .
