Monaco: "Monaco" is in classic cuisine the name of a preparation of poached fillets of sole, topped with a white wine sauce with tomato and fine herbs, garnished with prawns or poached oysters and croutons in wolf teeth .
The name also applies to a poultry consommé garnished with small balls of carrot and turnip, truffles and profiteroles, or bound with egg yolks and garnished with slices of bread powdered with sugar.
