Marie-Louise: “Marie-Louise” is, in classic cuisine, the name of a garnish made from pieces of lamb or mutton. It is composed either of apples-hazelnuts and artichoke bases garnished with a mushroom duxelle topped with onion puree, with a sauce obtained by deglazing with demi-glace, or tarts filled with peas and small carrot and turnip balls.
