Manufacture of Lorraine thistles: The manufacture of Lorraine thistles uses the technique known as "à l'starch ". The latter consists of cooking a Sugar Syrup in which is incorporated alcohol (mirabelle, cerise, Raspberry…), which is poured after cooking in impressions of starch, in order to allow the confinement of the alcohol in a core of cristalized sugar, after a few days, in contact with the starch. The whole thing is then finely coated in a chocolate couverture, the color of which indicates the type of liqueur that the thistle contains: the yellow is mirabelle plum, the green Chartreuse, pink with raspberry, white with Marc de Lorraine, etc.
Sale: Lorraine thistles are now easily found in confectioneries, certain pastries and supermarkets in the region, mainly in cans, in ballotin or in a variegated bag.
